Elite Dangerous actually has excellent planet generation, too. So does Space Engine, and as an added bonus, is free--unless you want to throw money the dev's way for the latest features.
Then there's No Man's Sky, which is quite awesome. 500 hours on Steam does not lie... However, don't expect a TES style story/NPC experience here. Best played in survival mode, like pretty much anything else.
