Any of Haupt Heydemarck's books to include, "Double-Decker C.666", "Flying Section 17", "War Flying in Macedonia"
"An Airman Remembers ", by Hans Schröeder
"My Escape From Donington Hall", by Gunther Plüschow
"Ace of the Black Cross", by Ernst Udet, (contains some propaganda as did most German works from this period)
"Jagdstaffel 356", by M.E. Kahnert, (another pre-WWII propaganda piece and somewhat fictionalized as I recall, but still worth a read)
And for a very unusual point of view try "Stepchild Pilot", by Joseph Doerflinger, (he flew for Germany in WWI and for France immediately after the war)
